Okay, it's story time!...so the other night I ate so much watermelon while watching The Office reruns that my stomach looked like I was pregnant. Okay, so that was a really short story. But it was in that moment that I realized I needed a more sophisticated way to eat watermelon.
Don’t get me wrong, ever since I was a lil squirt, I have loved to stuff my cheeks as full as possible with that glorious melon and munch, munch, munch and get sticky watermelon juice all over.
But hey, why not use some of those cucumbers coming out of mom’s garden and make a big-girl salad?
Sounds like a solid plan to me.
I mean. You just chop, ball, and toss your salad, blend your dressing, and drizzle.
Honestly, I think anything that gets you eating more salad is amazing and healthy. Watermelon and cucumber are full of vitamins and minerals that your body will thank you for.
All these lovely flavors make up just the most refreshing and DELIGHTFUL salad! I’m pretty sure I never want to eat watermelon alone again!
Cucumber Watermelon Salad with Lemon Dressing
- 4 cups balled watermelon
- 2 cups spiralized (or chopped) cucumber
- 1/2 red onion
- 2 avocados, balled
- 2 T fresh rosemary, roughly chopped
- 2 T fresh mint leaves, roughly chopped
- 1/2 cup slivered almonds
- juice of 2 lemons
- 1/2 tsp lemon zest
- 3 T olive oil
- 1 T apple cider vinegar
- 2 tsp honey
- 1/2 tsp salt
Toss salad ingredients in a bowl. In a blender, combine lemon juice, lemon zest, olive oil, vinegar, honey, and salt. Blend on high speed until emulsified. Drizzle over salad!
