double chocolate pancakes

Calling all breakfast food enthusiasts and chocolate lovers! Today we make history in this glorious matrimony between chocolate and pancakes. 

And you're thinking, "Double chocolate pancakes have been around for kind of a long time."

How dare you ruin this moment? 



It’s simple:

It’s just like my overnight oat pancakes. Just with some chocolate added. And it’s magical.



It’s healthy:

The basic pancake recipe is healthy. Simple. No weirdness. Then you just add some chocolate for your mental/emotional health. It’s a healthy splurge. Oh, and it's gluten and dairy free.


It’s delicious:

How can you argue with a streamy stack of pancakes with chocolate sauce oozing down the edges? You can’t. I’m sorry. 


Double Chocolate Pancakes


  • 2 cups almond milk (or coconut milk)
  • 2 T melted butter (or olive oil)
  • 1 tsp vanilla
  • 3 eggs
  • 1/4 cup agave, honey, or maple syrup
  • 2 cups oats (I prefer quick oats, because they're easier to blend; if you do use quick oats, you'll probably need to add a little extra)
  • optional: 2 T flax seed meal 
  • 3 T cocoa powder
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 2 tsp baking powder


Place all the ingredients in a blender or food processor and blend until smooth. You can add more oats for thicker pancakes and more milk for thinner ones. 


For the chocolate sauce:

  • 1/2 cup coconut cream
  • 3 T cocoa powder
  • 1/2 tsp vanilla 
  • 3 T maple syrup or honey
  • pinch of salt

Stir ingredients together by hand or hand mixer until it’s fluffy and no lumps remain. Mound on top of your pancakes!! :)
