It's got protein. It's got a low sugar content. It's so basic.
I’m going to be honest, I was a little skeptical when I saw a recipe for granola that only had four ingredients.
I mean, how good can it really be? I tried it out anyway, and let me tell you...
IT’S REALLY YUMMY.
I was a little surprised. It stays together in little clusters like the store-bought stuff. It is just a little sweet. It has a pleasant peanut-y flavor that isn’t too overpowering. It’s perfect. And it’s suuuuper easy to make!
Four-Ingredient Peanut Butter Granola
Yield: about 5 cups granola
5 cups old-fashioned oats
½ cup peanut butter (I used crunchy PB, because…why not?)
½ cup maple syrup
1 tsp. vanilla extract
Preheat oven to 275 degrees F.
Place oats in a large bowl. Combine peanut butter and honey in a small saucepan. Heat until the peanut butter starts to melt. Remove from heat and add in vanilla.
Pour the peanut butter mixture over the oats and stir until well combined. Spread granola in an even layer on a rimmed baking sheet. Bake for 20 minutes, stir, and then bake 10-15 minutes more until granola becomes light golden brown. Let cool completely on baking sheet. The granola will become crisp as it cools. Store granola in an airtight container for up to two weeks.
