If you're kind of like me and you spend way too much time on Pinterest, then you've probably seen recipes for mug brownies. 

It's simple.

It's like this...

You mix up the ingredients.


You stick it in the microwave.



And you make the whole world jealous of your instant, single-serve brownie.


It's healthy.

If ever there was a way to justify eating a brownie in the middle of the afternoon it's this: it doesn't even have any refined sugar. Pure maple syrup is completely natural and waaaay less processed than white sugar, and it has a lower glycemic index.

It's delicious.

Top it with a little raspberry jam, and you're basically on your way to heaven on earth.


What could possibly be better than delicious, gluten free brownies in less than 10 minutes?? 


Brownie in a Mug

serves: 1


  • 2 T butter or coconut oil
  • 3 T almond meal
  • 2 T cocoa
  • pinch of salt
  • 2 T maple syrup or agave
  • 1 egg yolk
  • 2 T chocolate chips


Place butter or coconut oil in a microwave-safe mug microwave for a few seconds until melted and smooth. Add in other ingredients and stir well. Microwave for 2-5 minutes. The time varies for different microwaves. Check your brownie frequently while it cooks to get it just right. 

Note: For these pictures, I made a double batch, which was enough to satisfy me and both my sisters.
