Guys, I love pancakes.
They're actually my favorite thing in the world.
And then there's that amazingly incredible, classic combination of peanut butter and jelly.
So I combined them.
AND IT WAS SO GOOD HOLYYYY
You just whip up a batch of my blender oat pancakes--unless you haven't already made and hoarded jars and jars of it in your refrigerator, like I do. Then you top it off with some delightful peanut butter fluff, a spoonful of jam, and some fresh berries. Mmmm...
The peanut butter sneaks in some protein, the coconut cream contains some very healthy fats, and the amount of sugar in this recipe is minimal, especially if you use fruit juice sweetened jam (my favorite brand is this stuff).
You have to try it. It's basically dessert for breakfast, let's be honest.
- Blender Oat Pancakes
- 2 T coconut cream
- 2 T maple syrup
- 2 T creamy peanut butter (or almond butter!!)
- a spoonful of jam
- some fresh raspberries or strawberries
Thoroughly whip together the coconut cream, maple syrup, and peanut butter until fluffy. Layer the pancakes with the peanut butter fluff and the fresh berries. Top it off with some jam, which you can heat up in the microwave to make it all melt-y!
