peach arugula potato bites


Hey, hey, friends! Guess who is a legal adult now?? That’s right—ya girl just had a birthday! I’ll share a few pics on my Tuesday Tidbits this coming week! For now though, I get to share with you all this DELICIOUS recipe for peach arugula potato bites!


These are really a just combination of all the foods I love best. And that’s why I’m just crazy about this recipe! It’s the perfect appetizer to bring to a party or to enjoy out on your patio with some friends. 


It’s simple. 

You just cook up thin potato slices and then pile them up with allllll the amazing toppings!! arugula, peaches, avocado, goat cheese, raisins, salt, and rosemary. AH! I’m telling you, these are all my favorite things!!


It’s healthy.

This is just good, fresh, real food, y’all. That’s what I love about this recipe. By the way, if you’re trying to make this into ameal (like a lovely lunch or something), just add some turkey lunch meat or hummus for protein, and you’ll have all your food groups! I totally did that when I made these, actually.


It’s delicious.

The sautéed potato slices get just a bit crispy, which make the perfect base for your sweet peaches and smooth avocados. Oh, and then just a little kick of flavor from the arugula and goat cheese. Ah my goodness! A touch of rosemary, a few raisins, and of course you need salt. You’ll be blown away by this lovely combination of flavors.

Peach Arugula Potato Bites

Serves: 4-6

  • 3-4 red potatoes
  • 1 T olive oil
  • 1 cup wild arugula
  • 1-2 fresh peaches, sliced
  • 1 whole avocado, sliced
  • 5-6 T goat cheese
  • about 1/4 cup raisins 
  • 1/2 tsp salt
  • 1 tsp dried rosemary

Wash and thinly slice the red potatoes. Place the olive oil in a large skillet and spread out the potato slices in the bottom of the pan. Cook over med-high heat for 10-12 minutes with lid on, checking occasionally, until golden on one side. Then flip and cook for another 8 minutes until golden on the other side. 

Remove potatoes from pan and allow to cool mostly. Then top with arugula, peach and avocado slices, goat cheese, raisins, salt, and dried rosemary.
