Oh, I’m reeeeally shaking things up with this recipe! And by that I mean that I’m finally posting a recipe that doesn’t involve peaches. Peaches are my thang; they’re my favorite fruit. But I need to mix things up, because summer is ending so soon, and I’ve gotta give some other fruits a chance to shine.
For example, plums!
Plums are amazing! I love plums! They’re so colorful and lovely and cute and sweet with maybe a touch of sour—like a sour gummy worm or something.
So of course I made ice cream out of them!
You blend your bananas + your peaches + almond extract. Top it all off with a bit of granola. So quick and easy!
You’re essentially just having fruit for dessert, but it feels like you’re indulging in something totally radically delicious and amazing (I mean—it’s because you are…but it’s just fruit). That’s what I love about ‘nana ice cream! Not to mention all the amazing vitamins and minerals found in bananas and plums. Yay for healthy desserts!
This ice cream has the perfect pop of summer from the plums and then that unique almond-extracy flavor to complement the plum-ness. It's a creamy delight with a little crunch from the granola to keep it interesting!
Plum Almond Crunch ‘Nana Ice Cream
- 2 fresh plums
- 2 frozen bananas
- 1/4 tsp almond extract
- 1/2 cup vanilla almond granola (or toasted almonds)
Chop frozen bananas and slice plums; add to blender, along with almond extract. Blend until smooth and creamy. Top with granola and serve immediately.
