popovers

Hey, everybody!! I've just returned from a week in the Dominican Republic! I'll be posting some pics of this incredible experience soon. For now, my friends, enjoy a gluten free popover!!

 



This is me and my mom's favorite quick recipe for an afternoon snack. Super easy and incredibly delicious. They are so nice slathered in butter with a hot cup of tea. Mmmmm...

It's simple.

Literally four ingredients. Super simple, super fast. 

It's healthy.

This recipe is mostly just eggs (high protein there?). No sugar. No gluten. Just pure goodness :)

It's delicious.

Hot out of the oven. Butter running down the edges. Or jam. Or lemon curd. Help, I'm drooling.

Popovers

Yield: 1 dozen small popovers

  • 5 eggs
  • 1 cup almond milk
  • 1 cup GF all purpose flour*
  • 1/2 tsp salt  

Lightly grease a muffin pan and place in a cold oven. Set temp to 450 degrees.

Mix all the ingredients in a blender. Or a bowl. Or a stand mixer. But a blender is probably easiest.   

Once the oven is hot, pull out muffin pan and pour batter in 3/4 full. Beware the small smoke cloud. It’s a necessary evil.

Put the popovers in the oven and cook for 25 minutes. Take them out of the oven and turn them out onto a spread out towel on your counter. Let cool for a few seconds and eat them while they’re warm.

You can heat them up again in the microwave if you want, or just eat them cold later on. I just really think they’re better warm.

*Note: I like this stuff. Trader Joe's brand is good too.
