Who doesn't love a really good salad?
You just blend up the dressing and toss up the salad. Really, what could be simpler?
With the dark, green spinach leaves, healthy fats from the avocado, and antioxidant-rich strawberries, you have yourself a health-packed salad.
The sweet dressing and the fresh burst of strawberry compliment the toasted almonds just right. And then there's that irresistible creamy avocado thrown in there to make everything gloriously delicious.
I love making this strawberry dressing in large batches and keeping it stored in the fridge for all sorts of salad and dips. It's so good.
Strawberry Vinaigrette Salad
- 1 cup strawberries (either fresh or you can thaw frozen ones)
- 1/4 cup balsamic dressing
- 1/4 cup olive oil
- 1/2 tsp salt
- 1 T honey
- 2 cloves garlic
- 1 lemon, juiced
- 1/4 tsp xanthan gum
Blend all ingredients until thoroughly combined in blender.
- 5 cups spinach
- 1/4 cup slivered almonds (toasted)
- 1/2 cup strawberries
- 1/2 yellow onion
- 1 avocado
Wash spinach; slice strawberries, onion, and avocado. Toss salad ingredients and dress with the vinaigrette.
