Waffles have always been a favorite breakfast of mine and my sister's. Especially for those lazy Saturday mornings when we turn on music and make tea and then just douse the waffles in way too much maple syrup and way too many strawberries and bananas.
Just mix up the batter in a blender or food processor and cook it up like a pro.
They may not be the most ideal "healthy" breakfast for most mornings, but as a special splurge these gluten- and sugar-free waffles are about as healthy as they come.
Suuuuper delicious!! As far as gluten free waffles go, I think the texture of these is pretty on point. Try making them for a friend and see if they'll notice they're gluten free right away.
Gluten Free Waffles
Makes: about 8
- 1 cup almond milk (or coconut milk)
- 2 T melted butter (olive or coconut oil for dairy free peeps)
- 1 tsp vanilla
- 4 eggs
- 2 T agave, honey, or maple syrup
- 2 1/2 cups GF oats (or use quick oats or oat flour because it's easier to blend)
- 1 cup potato starch
- optional: 2 T flax seed meal
- 1/2 tsp salt
- 1/2 tsp baking soda
- 2 tsp baking powder
Combine all ingredients in a blender or food processor. Blend until smooth. If you’re using rolled oats, it’ll take a few minutes to make it smooth.
Follow the directions on your waffle iron to cook up the batter!
