sushi at the lake
So last week my Dad all of sudden is all, "Hey fam! Let's go camping at the lake!" And we were like, "Ummm...sure that sounds fun." And his response is something along the lines of, "Alright. Can you all be ready to leave in 20 minutes?"
Fast forward two hours and there we were chilling at Jordan Lake, sipping kombucha, and laying a fire. I was a little disappointed to miss sushi night, until I realized my mom had brought the sushi ingredients with us! And so we made sushi in our little camper and ate like royalty that evening. I have to say I was pretty excited about the fact that we put peaches in our sushi rolls. That really hit the spot.
This last week was spent at summer camp with my amazing youth group. (That’s actually why I didn’t make any Tuesday Tidbits last week—life got a little crazy). We had a blast! My favorite part was when we turned our cabin into an eno hammocking forest.

I had this little freakout moment yesterday when it hit me that classes start next week. What even happened to my summer?? I don’t know, but I had some good times. From hitting up local coffee shops and making friends at the farmers’ market to hiking at Yosemite and touring along California’s gorgeous coast to making peach tacos and waterskiing at the lake—all very much good fun!
We’ll have one last hoorah camping at the lake this weekend, and Monday I will dive into my carefully planned out schedule. Until then, I am *trying* not to panic as I gather school supplies, stock up on quick breakfast foods (just made a huge batch of granola, a quadruple batch of coconut yogurt, and a dozen muffins to freeze), and do all the things I most certainly won’t have time for when school starts (i.e. organizing my closet and setting up my new school space).
With all the preparation, I’m excited for this semester! I’m excited for all the new ideas I have for my blog and things I get to share with you all!
what I’ve been eating
Here’s just a little preview of what I’ve been eating this week. I’ve been trying to cut out sugar from my diet and focus on vegetables to give me energy. Which doesn’t always mean salads for every meal. Green smoothies are a great way to sneak veggies into your breakfasts! Oh, and this ginger lemon peach iced green tea was on point! It’s just green tea, shredded ginger, honey, lemon juice, and sliced peaches. Y to the U to the M!
